The Humble Pancake

I love baking cakes, but my favorite breakfast cake is the pancake, simply layered one on top of the other. The humble pancake is a quick go to recipe for most of us as it is a convenient yet delicious breakfast for the entire family, and you can creatively customize the toppings.
To be honest with you, I've been making pancakes for just about a few years now. It began with experiments to deal with a fussy eater in the family. This recipe is a concoction of the many I have tried over time. While we don’t always have all the ingredients on hand, there are substitutions that are made and sometimes they turn out better than the original!
I love adding a considerable amount of vanilla essence and using butter both in the batter and to cook the pancake, giving it the extra crispy yet soft texture on the outside making this pancake exceptionally fluffy & scrumptious!

The Humble Pancake
Servings: Makes 4 servings
Prep Time: 5 minutes
Cook Time: 15 minutes
Ingredients:
◻ 2 cup of flour
◻ ½ cup sugar
◻ 1 tsp baking soda / 4 tsp baking powder
◻ 1 ½ cup milk / 1 ½ cup buttermilk
◻ 2 eggs
◻ 1 tbsp vanilla essence
◻ 4 tbsp butter + 1 tbsp
Preparation:
1. In a large bowl whisk together the flour, sugar and baking soda.
2. In a medium bowl, whisk the milk, eggs and vanilla essence until well combined.
3. Add the wet ingredients to the dry ingredients and stir.
4. Microwave the 4 tbsp butter for 30 seconds or until it melts.
5. Add the melted butter to the batter and mix.
6. Heat a large skillet in medium heat until hot and then add some butter.
7. Pour the batter, about ¼ cup at a time. Cook until the top is covered in bubbles and edges are a crispy brown.
8. Then flip and cook for 2 to 3 minutes, until the other side is browned.
9. Transfer the pancakes to the platter. Serve hot with butter and maple syrup.
P.S. Depending on availability, the pancake can be topped with fresh fruits like banana, strawberries, blueberries and cream. It also pairs well with caramel, chocolate, fruit based sauces and many more … so go ahead, get creative with it.
